DIRECTIONS:
Boil potatoes until soft. One, large potato is enough for two people
Place into cold water bath
Peels will come right off
Then cut into cubes
ADD INGREDIENTS:
½ chopped onion
½ bunch finely chopped parsley
½ cup olive oil
¼ cup white vinegar
¼ cup lemon juice
Salt, pepper to taste
Refrigerate until ready to serve – tastes better when it has time to marinate (a couple of hours, or overnight)
